Mysore Rasam

Mysore Rasam has its origin from mysore..This is a very tasty rasam.


Ingredients:
Tamarind - 1 small lime size or use a concentrated tamaring paste
Thoor dal -1/4 cup-pressure cook - keep it ready
Toamato - 1
Green Chillies - 2
Turmeric powder - a pinch
Salt
Ingredients to raost and grind to powder :
Pepper corns - 6
Dry Red chillies - 3
Coriander seeds - 1ts
channa dal - 1/4 tsp
Roast everything in 1/2 tsp of ghee and grind it to a smooth powder

Seasoning :
Mustardseeds
Curry Leaves
Corainder/Cilantro leaves
Ghee - 1tsp

Things to Keep Ready :

Wash and pressure cook the thoor dal for 3 whistles.smash well.
Grind the ingredients and keep it ready

How to Cook:
--Soak the tamarind in warm water and extract the juice.Add 2 cups of water..
--Dice the tomato into small cubes
--Add tomato,green chilli,salt,a pinch of turmeric powder to the tamarind water and bring to boil for 5mins----Now add the roasted ingredients(grounded powder or paste) to the rasam and boil it for 3mins on a medium flame
--Now add the smashed thoor dal.let it boil for 2mins
--Season the rasam with mustard seeds,curry leaves,a pinch of asafoetida in a tsp of ghee

Tips:
U can also add coconut to garnish the rasam which is optional.
Serve hot with rice and pappad

Instant Milagu Rasam/Instant Pepper Rasam

Very simple recipe.Can make in just few mins.This rasam is very good when we are having fever or cold.Pepper has got lot of medicinal properties.
Instant Milagu Rasam :

Ingredients:
Pepper - 1tsp
Dry Red chillies - 1
Thoor Dal - 1/2 tsp
Curry leaves
salt
water-1cup
How to Cook:
--Take 1/2 tsp of ghee roast all the three ingredients and grind it to a smooth powder..even if its coarse its okay..
--Now add 1 cup of water,add diced tomatoes,salt and bring it to boil for 5mins on a medium flame
--Now add the powder(Step1 ) to this and bring it boil just for 1min..
--Now season the rasam with mustard seeds,a pinch of asafoetida,curry leaves in 1tsp of ghee
Tips:
--Dont boil the rasam too long after adding the grounded ingredients(Pepper,red chiili,thoordal)as this will spoil the taste.

Lime/Lemon Rasam


Ingredients :


Tomatoes-1

Rasam Powder - 1tsp

Asafoetida - a pinch

Thoor Daal - Pressure cook it - Keep it ready..

Green Chillies - 2(Slit into lengthwise)

Water - 2cups

Curry Leaves

Coriander leaves(Cilantro)

Mustard Seeds

Cumin Seeds

Lime - 1

How to Cook:

--Bring the water to boil,add green chillies,rasampowder

--Add salt

--Once its start to boil,add the smashed thoor dal and bring to boil for 2mins

--Season it with Mustard seeds,Cumin seeds,Curry leaves,Asafoetida

--Let it cool for 3 to 5 mins

--Now add the squeezed lime juice(Add the lime to the taste u desire)

--Garnish it with Cilantro

Tips:

Always add the lime juice after removing the rasam from the flame

No need to use tamarind water as u use lime juice instead of that..

Jeera Rasam/Cumin Rasam

My fav Rasam..My mom's best recipe..What a taste...



Ingredients:
Jeera 1 1/2 teaspoon
Red chilli 3
Thoor dal 1 tsp
Tamarind - very small lime size - ( soak it in hot water and extract the tamarind pulp)
Tomato - 1
Salt
Curry leaves
ghee-1tsp
How to Cook :
--Soak the jeera(Cumin Seeds), red chillies and toor dal in warm water for 10 minutes. Grind it to fine paste along with tomato,curry leaves..
--Now add the fine paste to the tamarind water.
--Bring it to boil
--Turn it off when it comes up..
Season the Rasam:
In a small pan,Add mustard seeds,curry leaves,Asafoetida a pinch and finally add it to the rasam
Tip :
Adding tomato will give good taste to jeera rasam

Instant Traditional Rasam

Very quick and easy rasam in just few mins


Ingredients:
Extract Tamarind pulp - You can get the concentrated one to make the job very easier.
Now take :
coriander seeds-1 tsp
Thoor dal-1 tsp
Cumin Seeds - 1/2 tsp
Red chillies-2
Asafoetida - Just sprinkle
Tomatoes - 1/2(Take in one large tomato and cut into half)
How to Cook:
--Fry all the above ingredients lightly in golden brown in a spoon of ghee and grind it in a mini blender..
--Steam 1/2 cup of toor dal in a pressure cooker.Boil the tamarind water with salt,

Green chillies - cut in lengthy wise ,Add the other half of the tomato.. Add the grinded ingredients.. Finally Add --steamed toor dal water alone to get a thin consistency.. let it boil for 2mins..
--Season it with mustard seeds,cumin seeds,Asafoetida,curry leaves. turn it off and add coriander leaves(Cilantro)
