We had a great diwali get together this year..It was so much fun with our friends and also with the fireworks..We also had a potluck..My contributions to the party are kadai paneer and fried rice..Sharing this recipe with u all..
Ingredients :
Paneer – 250 grams
Tomato – 3 - pureed
Green chili – 2
Capsicum /Bell Pepper– 2-3
Ginger-Garlic Paste - 1/2 tsp
Onion - 1
Butter - 2 tsp
Oil - 4tsp
Cumin seeds/Jeera - 1/2 tsp
Dhaniya/Coriander powder – 1/2tsp
Turmeric powder- a pinch
Garam Masala Powder - 1/2tsp
Salt – to taste
Kasoori Methi - 1/2 tsp
Cashews - 4
Green Coriander – 1 tablespoon (chopped)
How to Cook:
Wash the capsicum.Cut it into blig slices and fry it well and keep it ready.
Heat 2 tsp butter,add green chillies,cumin seeds,bay leaf,add chopped onions and fry till it turns light brown..
Add the tomato puree,add 1tsp oil and fry till the oil separates from the tomato..
Let it cool down
Add 4 cashews and Blend the mixture(Fried onions and tomato) in a blender just for 2 secs
Now add 2 tsp oil,add ginger -garlic paste..fry well and add the blended mixture
Add dhaniya powder,garam masala powder(or the channa powder- Bcos if u see the ingredients it will be just like garam masala),salt and mix well
Now add the cooked/fried capsicum slices,kasoori methi into the mixture and add the paneer cubes..
bring it boil for 3mins..
garnish it with coriander leaves..
Serve it with Chappathi,rice,bread
Tips:
If u want the paneer cubes to be soft then dont fry the paneer..
Adding cashews will enhance the flavor and color for the kadai paneer
