Basmati Rice - 2 cups
Carrot - 1 grated
Potato - 1 large
Bell Pepper - 1
Beans - few
Green Peas - 1/4 cup
Oil - 2tsp
Cumin Seeds/Jeera- 1/4 tsp
Aniseed - just 1
Green Cardamoms - 3 Crushed
Cloves - 3
Bay Leaves - 2 bigsize
Green Chillies - 2
Cashews - 5
Things to keep ready:
--Grate the carrot and keep it aside
--Chop the potato in lenghty wise or in cubes
--Cut the beans - just few should be enough
--Bell pepper - chop it and keep it ready
--Chop the onion..
How to Cook:
--Soak rice for 15 minutes. Wash the rice and drain the dirty water
--Cook the rice first in an open pan by adding a tsp of oil to avoid the rice sticking to each other..once its done.turn off the flame and keep it aside.Let it cool down..
--this is how i prefer to do..
--Heat up 2 tsp oil in a heavy bottom vessel.Add cumin seeds,bay leaves,green chillies,cloves,cardamoms,aniseed,ginger-garlic paste..Saute well on a medium flame
--Then add onion and fry well..
--Now add in green peas,potato,carrot,bellpepper,fry it well..keep stiring.. Add salt to it..once its well cooked..
--Now add this mixture to the cooked rice and mix well in a medium flame for 3mins..and turn off the flame..
--Finally roast some cashews in a tsp of butter/ghee and garnsih the rice..
--thats it..yummy vegetable pulao is ready..I really got very good appreciations from my friends..
serve it with raita,paneer dishes
Alternate Method :Usual Method:
Soak the rice for 20mins..
Heatup the pan with 2tsp of oil.Add bay leaf,aniseed,cloves,cumin seeds,green chillies,onion fry it well then add all the cut vegetables(BellPepper,Potato,Carrot,Peas)Add some salt and saute them well.
Now add the soaked rice to this mixture and cook well till its done..
Roast some cashews and garnish the vegetable pulao with cashews,coriander leaves..
While cooking the rice,Add some cumin seeds,mint leaves to enhance the flavour...
